A Reserve Cuvee in confidential quantities, called Lou Gavéou, is proposed in the best vintages, for example 1993, 1995, 1998, 2000 and 2003. It is a blend of old Grenache with low yields and 10% Shiraz that is concentrated by bleeding.



The wines are kept for several months in oak barrels in order to soften the tannins.

A dark red colour typical of the powerfully concentrated Shiraz and Grenache, its nose evokes black cherries, blackberries and blueberries. On the palate it has aromas of tobacco, liquorice and spices, with good, silky tannins. It has a long, enduring finish.


Lou Gavéou means ‘Les Gavelles’ in the old Provencal dialect. It refers to bundles of vine cuttings which are still used today to separate the grape juice on bleeding a tank. In poetic Provencal “l’holi dou gaveou”, or ‘the juice of the trellised vines’ designates ‘wine’.
 
“Faire lou gaveou”, or ‘do the gaveou’, means to dance, spinning around on one’s left leg, which is a demonstration of joy formerly  a common practice in the communes around Aix and Marseille.
