No fining, no chaptalising, no acidifying


« MURMURE » Red 2004 : Grenache – Shyraz – Cabernet-Sauvignon – Carignan – Mourvèdre


The blend of the different grape varietals and the long maceration make this a cuvee of astonishing elegance and complexity. Only part of the wine was barrel aged in a selection of  different sized barrels using different woods, and both new or second fill, which enabled us achieve a very delicate aromatic woodiness which leaves the fruit to express itself fully.
 
A beautiful dark colour, this wine expresses aromas of Morello cherries mingled with sweet spices like cinnamon and vanilla. Good fleshy structure and full bodied on the palate, this wine shows a pleasant balance between its richness and freshness. The aromatic expression continues through the long finish. This wine goes very well with delicate red meat and game birds. After a few years in the cellar, the aromas evolve to forest undergrowth and leather, suited to dishes with girolle mushrooms, truffles and various game.

« MURMURE » Red 2003 : Grenache – Shyraz – Cabernet-Sauvignon – Carignan – Mourvèdre


 The different grape varietals used in the Red Murmure are vinified separately with long maceration. They are finished with partial barrel aging, making them pleasant while still young, although they can also be kept for a few years in the cellar. The very dark colour of the Murmure red cuvee suggests its powerful structure, but it is also very smooth and round; on the nose, initially with very ripe cherries and spices with a few hints of liquorice, then on the palate it shows a silky texture with beautifully textured tannins.
 
It is a wine best served still young, with grilled meats, or in 4 – 5 years when it will show a range of aromas such as forest undergrowth, leather and other spices, perfect to serve with game or sautéed wild mushrooms.

« MURMURE » Rosé 2006 : Shyraz – Grenache – Cinsault – Vieux Carignan


 
SILVER MEDAL CONCOURS DES VINS BIOS 2007

We use cold fermentation vinification for this rosé in order to preserve the most delicate aromas. Made from press juice and entirely in tanks, the wine thus keeps all its freshness and liveliness. A brilliant light colour, the nose is dominated by aromas of freshly cut fruit. On the palate there is a pleasant balance between the zippy acidity and the full body.
 
This Murmure cuvee is lovely served with many different dishes, and also as an aperitif. It is always a good match with Mediterranean cuisine.

« MURMURE » White 2005 : Rolle - Sauvignon blanc


After having reached optimal ripeness, the Sauvignon Blancs and the Rolles were cold pressed to conserve all the aromatic expression and then vinified in tanks in order to keep all the purity of the fruit. The long cold fermentation and leaving the wine on the fine lees have given the best aromatic expression possible to the wine and has endowed it with good body and fullness.
 
The wine is a very pale brilliant colour. The nose is expressive with fresh fruit, such as the dominant citrus fruit. The wine is beautifully crisp right from the start on the palate, with a round smoothness obtained from the time spent on the lees, making this Murmure cuvee versatile enough to go well with different types of seafood and as always, with fresh goats’ milk cheese. Its upfront fruitiness makes it a good aperitif wine too.

« MURMURE » White 2004 : Rolle - Sauvignon blanc - Ugni blanc


  Traditional vinification in tanks for most of the wine and a portion of the Sauvignon Blanc vinified and aged in oak barrels, has kept all the freshness and upfront fruit, whilst giving it a lovely roundness. Gorgeous fruit aromas, like fresh pear, make the cuvee Murmure white an elegant fresh wine that easily goes with many dishes, in particular seafood, but also fresh goats’ milk cheese and summer salads. Drink chilled within two to three years.
